Delightful homemade mochi ice cream with a chewy outer layer and a creamy filling, customizable with your favorite flavors.

Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup granulated sugar
  • 1 cup water
  • Cornstarch (for dusting)
  • Ice cream (any flavor of your choice)

Instructions

  1. Mix the dry ingredients in a medium bowl until well combined.
  2. Create the mochi mixture by gradually adding water while stirring until smooth.
  3. Microwave the mixture in a microwave-safe dish, covered, on high for 1 minute.
  4. Stir the mixture, then microwave for another minute.
  5. Final microwave burst: stir again and microwave for 30 seconds until slightly translucent.
  6. Cool the mochi slightly, dusting hands and surface with cornstarch to prevent sticking.
  7. Flatten the mochi on the surface and cut into small squares (about 3 inches across).
  8. Fill each piece of mochi with a small scoop of ice cream, folding and pinching edges to seal.
  9. Freeze the mochi ice cream for at least 30 minutes before serving.

Notes

Serve with chocolate or caramel sauce, fresh fruits, or matcha tea. Store in an airtight container in the freezer for up to 2 weeks.
