  • 1 1/2 cups granulated sugar
  • 12 large egg whites
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sift the cake flour and 3/4 cup of the sugar together; set aside.
  3. Beat the egg whites with cream of tartar and salt until soft peaks form.
  4. Gradually add the remaining sugar, about 1/4 cup at a time, until stiff peaks form.
  5. Fold in the vanilla and almond extracts.
  6. Gradually fold in the flour mixture, careful not to deflate the egg whites.
  7. Pour the batter into an ungreased angel food cake pan.
  8. Bake for 30-35 minutes or until golden brown and springs back when touched.
  9. Invert the pan to cool completely before removing the cake.

For best results, ensure all utensils are grease-free and use room temperature egg whites.
