A creamy and nutritious pasta dish featuring ripe avocados, garlic, and fresh basil for a burst of flavor.

Ingredients

  • 2 ripe avocados
  • 2 cloves garlic
  • 1/4 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 12 oz pasta (fettuccine or spaghetti)
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Once cooked, drain it and set it aside.
  2. Prepare the avocado cream by blending the ripe avocados, garlic, basil, lemon juice, and olive oil in a food processor until smooth.
  3. Season the avocado cream with salt and pepper to taste.
  4. Combine the cooked pasta with the avocado cream in a large bowl and toss until fully coated.
  5. Serve immediately, topped with freshly grated Parmesan cheese if desired.

Notes

Serve with a crisp side salad or roasted vegetables. This dish can also be enjoyed cold.
