Ingredients

  • 1 ripe avocado
  • 2 eggs
  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes (optional)
  • Olive oil (optional)
  • Lemon juice (optional)

Instructions

  1. Toast the slices of bread until golden brown.
  2. Cook the eggs to your preference: poached, scrambled, or fried.
  3. Mash the ripe avocado in a bowl, adding salt, pepper, and lemon juice if desired.
  4. Spread the mashed avocado generously on the toasted bread slices.
  5. Top each slice with your cooked egg.
  6. Sprinkle with red pepper flakes and drizzle with olive oil.
  7. Serve immediately while warm.

Notes

Best enjoyed fresh as the avocado can brown quickly after mashing. Store unassembled toast components in the fridge for up to a day.
