A simple yet impressive rustic dessert featuring juicy blueberries and a flaky crust, perfect for summer.

Ingredients

  • 1 1/2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 premade pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon butter (to dot)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix together the blueberries, granulated sugar, cornstarch, lemon juice, and salt.
  3. Roll out the premade pie crust on a baking sheet.
  4. Pour the blueberry mixture into the center of the crust.
  5. Fold the edges of the crust over the blueberries.
  6. Brush the crust with beaten egg and sprinkle with coarse sugar.
  7. Dot the filling with small bits of butter.
  8. Bake for 30-35 minutes until the crust is golden brown.
  9. Let the galette cool slightly before slicing.
