A delightful mix of chewy brownies and soft cookies, Brookies bring together the best of both worlds for a nostalgic dessert experience.

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 package brownie mix
  • 1/4 cup water
  • 1/3 cup vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. Mix in the all-purpose flour, baking soda, and salt until fully combined.
  5. Fold in the chocolate chips.
  6. Spread half of the cookie dough into the bottom of the prepared baking pan.
  7. Mix the brownie mix with the water and vegetable oil according to package instructions.
  8. Pour the brownie batter over the cookie layer.
  9. Drop spoonfuls of the remaining cookie dough over the brownie batter.
  10. Bake for 25 to 30 minutes, or until a toothpick comes out with moist crumbs.
  11. Let cool for 10 minutes before cutting into bars.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
