Delicious and spicy Buffalo Chicken Stuffed Peppers, perfect for weeknight dinners or game day gatherings, combining bold flavors with nutritious bell peppers.

  • 4 bell peppers
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, and ranch dressing. Mix well.
  4. Stuff the mixture into each bell pepper.
  5. Place stuffed peppers in a baking dish and drizzle with olive oil.
  6. Sprinkle remaining cheddar cheese on top of the peppers.
  7. Cover with foil and bake for 25 minutes.
  8. Remove foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and serve.

Notes

For extra flavor, add diced celery or carrots to the chicken mixture. Adjust buffalo sauce amount based on your spice preference. Can be served with additional ranch or blue cheese for dipping.
