  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract (for the cream)
  • Pistachios or additional chocolate chips for garnish

Instructions

  1. Preheat your oven and prepare the cake mix according to the package directions. Pour the batter into greased cake pans and bake until a toothpick comes out clean.
  2. Make the cannoli filling by mixing together ricotta cheese, powdered sugar, and 1 teaspoon vanilla extract. Fold in mini chocolate chips to create that delicious texture.
  3. In a separate bowl, whip the heavy cream with granulated sugar and 1 teaspoon vanilla extract until stiff peaks form. Gently fold the whipped cream into the ricotta mixture, ensuring everything is light and airy.
  4. Once the cakes are completely cooled, carefully spread a layer of the cannoli filling between the layers and on top of the cake.
