  • 6 oz semi-sweet chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Start by melting the chocolate in a heatproof bowl over simmering water. Stir gently until it’s beautifully smooth. Once melted, remove from heat and let it cool slightly.
  2. In a separate bowl, whip the heavy cream until it forms soft peaks. This light and airy component is what gives the mousse its luxurious texture. Once ready, pop it in the refrigerator to keep it cold.
  3. In another bowl, whisk the egg yolks and sugar together until pale and creamy. This creates a luscious base for our chocolate. Now, add the slightly cooled melted chocolate and vanilla extract, mixing until fully combined.
  4. In a clean, dry bowl, beat the egg whites with a pinch of salt until stiff peaks form. These peaks will give the mousse that dreamy consistency!
  5. Gently fold the whipped cream into the chocolate mixture first, being cautious to maintain airiness. Then, fold in the beaten egg whites, taking your time to ensure everything is well-combined but light and fluffy.
  6. Spoon the sumptuous mousse into individual serving dishes or bowls. Cover them gently and refrigerate for at least 2 hours, allowing the flavors to develop and the texture to set.

Notes
