A vibrant and lively dip made with a colorful medley of beans and fresh vegetables, perfect for gatherings.

Ingredients

  • 1 can of black beans, rinsed and drained
  • 1 can of corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 limes
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Gather your ingredients. Make sure you have all your ingredients ready. Rinse and drain the black beans and corn, and chop the vegetables into bite-sized pieces.
  2. Combine the veggies and beans. In a large mixing bowl, combine the rinsed black beans, drained corn, diced red and green bell peppers, diced red onion, diced tomatoes, avocado, and chopped cilantro.
  3. Whisk the dressing. In a separate bowl, whisk together the lime juice, cumin, and a pinch of salt and pepper.
  4. Dress your Cowboy Caviar. Pour the dressing over the bean and vegetable mixture and toss gently to combine.
  5. Serve and enjoy! Serve it with crispy tortilla chips or use it as a fresh topping on tacos.

Notes

For an even fresher taste, let it sit in the fridge for about 30 minutes before serving.
