A delightful and comforting dish that combines juicy chicken, vibrant vegetables, and rich creamy sauce over pasta.

  • 8 oz penne pasta
  • 1 lb chicken breasts, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced chicken breasts and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic and cherry tomatoes to the skillet. Sauté for 2-3 minutes until tomatoes are softened.
  4. Add spinach and cook until wilted.
  5. Stir in heavy cream and Parmesan cheese. Mix until well combined and creamy.
  6. Add the cooked chicken and pasta to the skillet. Toss to combine and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh basil.

Notes

For a lighter version, you can use chicken thighs instead of breasts. Add mushrooms or bell peppers for extra texture.
