  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking powder

  • 1/2 cup powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the granulated sugar and vegetable oil until smooth and combined.
  3. Add the eggs and vanilla extract to your mixture and stir well until blended.
  4. Combine the flour, cocoa powder, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until the dough is even and well combined.
  6. Chill the dough for about 30 minutes to 1 hour in the refrigerator for easier handling.
  7. Once chilled, scoop out tablespoon-sized portions of dough and roll them into balls.
  8. Roll the balls in powdered sugar to coat them generously.
  9. Place the coated balls on a baking sheet lined with parchment paper, ensuring they are spaced apart.
  10. Bake for 10-12 minutes or until the cookies are set and the tops have cracked beautifully.
  11. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store any leftover cookies in an airtight container at room temperature for up to one week. Freeze for up to three months.
