Ingredients

  • 2 chicken breasts, grilled and sliced
  • 1 cup cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 cups spinach or mixed greens
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Combine spinach or mixed greens with quinoa or brown rice in a large bowl.
  2. Top with grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  3. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  4. Drizzle the dressing over the power bowls and serve immediately.
