  • 8 ounces pasta (such as rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain it well and rinse under cold water to cool it down.
  2. Combine the cooled pasta with cherry tomatoes, cucumber, red onion, red bell pepper, Kalamata olives, and crumbled feta cheese in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and gently toss everything together to combine.
  5. Serve the Greek Pasta Salad chilled or at room temperature.

Notes

For a heartier salad, add grilled chicken or chickpeas. Store dressing separately until serving to keep vegetables crisp.
