A delicious and moist healthy zucchini bread that combines wholesome ingredients and a hint of sweetness.

Ingredients

  • 2 cups grated zucchini
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix the grated zucchini, applesauce, honey, oil, eggs, and vanilla extract until well combined.
  3. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
  4. Combine the dry ingredients to the wet mixture, stirring until just combined.
  5. Transfer the batter into the prepared loaf pan and spread it evenly.
  6. Bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Allow to cool for 10 minutes in the pan before transferring to a wire rack.

Notes

For extra flavor, add nutmeg or dried cranberries. Store in an airtight container for up to 3 days at room temperature.
