Delicious and nutritious muffins packed with protein, perfect for breakfast or a snack.

Ingredients

  • 1 cup oat flour
  • 1 cup protein powder
  • 1/2 cup Greek yogurt
  • 1/2 cup milk (or plant-based milk)
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: chocolate chips, nuts, or fruits for mix-ins

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. In a mixing bowl, combine oat flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, mix Greek yogurt, milk, honey or maple syrup, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. If desired, fold in chocolate chips, nuts, or fruits.
  6. Divide the batter evenly among the muffin liners.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

These muffins can be stored in an airtight container at room temperature for up to three days; refrigerate for up to a week or freeze for up to three months.
