A refreshing and tangy Key Lime Pie, reminiscent of sunny summers, perfect for any occasion.

  • 1 ½ cups graham cracker crumbs
  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup key lime juice
  • Zest of 2 key limes
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom and up the sides of a pie dish. Bake for 8-10 minutes until lightly golden.
  2. Whisk together the egg yolks, sweetened condensed milk, key lime juice, and key lime zest until smooth. Pour this mixture into the baked crust, spreading it evenly.
  3. Bake the pie for another 15 minutes, then remove from the oven and let it cool.
  4. Refrigerate the pie for at least 3 hours to allow flavors to meld.
  5. Whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream generously on top of the cooled pie before serving.

Notes

Use fresh key lime juice for the best flavor. The pie can be stored in the refrigerator for up to 3 days.
