Ingredients

  • 1 lb ground lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Olive oil (for grilling)

Instructions

  1. In a large bowl, combine ground lamb, onion, garlic, cumin, coriander, cinnamon, paprika, cayenne, salt, and pepper. Mix well until fully combined.
  2. Form the mixture into oval-shaped patties or mold it onto skewers.
  3. Preheat the grill to medium-high heat and brush with olive oil.
  4. Grill the kofta skewers for about 8-10 minutes, turning occasionally, until cooked through and nicely charred.
  5. Remove from grill and let rest for a few minutes.
  6. Garnish with fresh parsley and serve with pita bread and your favorite dipping sauce.

Notes

For extra flavor, let the lamb mixture marinate in the fridge for a couple of hours before grilling.
