  • 1 cup white chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd

Instructions

  1. Preheat the oven to 425°F (220°C) and grease your ramekins well.
  2. Melt the butter and white chocolate together in a microwave-safe bowl until smooth.
  3. Whisk together the eggs, egg yolks, and granulated sugar until thick and pale.
  4. Combine the melted chocolate mixture with the egg and sugar blend.
  5. Mix in the all-purpose flour, vanilla extract, and salt until no flour streaks remain.
  6. Fill the greased ramekins halfway with batter, add lemon curd, then top with remaining batter.
  7. Bake for 12-14 minutes until edges are firm and center is soft.
  8. Cool for a minute, then invert onto plates and serve with whipped cream or extra lemon curd.

Notes

For best results, do not overbake to ensure the cakes remain molten.
