- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped

- Olive oil

Instructions
- Cook the orzo: Bring the vegetable broth to a rolling boil and add the orzo pasta. Cook according to package instructions until al dente. Drain and set aside to cool slightly.
