Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
  2. In a bowl, mix the zucchini, almond flour, Parmesan cheese, eggs, green onions, garlic, salt, and pepper until combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the skillet, flattening them into fritters.
  5. Cook for 3-4 minutes on each side, or until golden brown.
  6. Remove and place on paper towels to drain excess oil. Serve warm.

Notes

For extra flavor, consider adding herbs like dill or parsley. For heat, add a pinch of red pepper flakes.
