Juicy grilled chicken breasts topped with fresh mango salsa for a vibrant and flavorful dish.

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and finely chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Combine the diced mango, red onion, cilantro, jalapeño, lime juice, and salt in a bowl.
  4. Grill the chicken for 6-7 minutes per side until cooked through.
  5. Serve the chicken topped with mango salsa.

Notes

For leftovers, store chicken in an airtight container for up to 3 days. Salsa is best fresh but can be kept for 1 day.
