An easy and delightful no-bake dessert with a creamy coconut filling and a crunchy graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) container whipped topping, thawed
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup sweetened flaked coconut (for topping)

Instructions

  1. In a bowl, mix graham cracker crumbs, shredded coconut, sugar, and melted butter. Press the mixture into the bottom and up the sides of a pie dish.
  2. In another bowl, beat cream cheese and powdered sugar until smooth. Fold in whipped topping.
  3. In a separate bowl, whisk together coconut milk and vanilla extract. Gradually add this mixture to the cream cheese mixture.
  4. Pour the filling into the crust and smooth the top.
  5. Chill in the refrigerator for at least 240 minutes or until set.
  6. Before serving, sprinkle with flaked coconut.

Notes

For an extra special touch, add a dollop of whipped cream or a sprinkle of additional toasted coconut on top.
