Ingredients

  • 1 bell pepper (red)
  • 1 bell pepper (yellow)
  • 1 bell pepper (green)
  • 1 cup cherry tomatoes
  • 1 cup button mushrooms
  • 1 zucchini
  • 1 red onion
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Skewers

Instructions

  1. Preheat the grill to medium heat.
  2. Chop the bell peppers, zucchini, and red onion into bite-sized pieces.
  3. Thread the veggies onto skewers, alternating colors.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Grill the kabobs for 10-15 minutes, turning occasionally.
  6. Serve hot, alone or with your favorite dipping sauce.

Notes

For best results, soak wooden skewers in water for 30 minutes before grilling.
