A quick and easy meal featuring flaky salmon topped with zesty lemon and roasted vegetables, perfect for busy weeknights.

Ingredients

  • 4 salmon fillets
  • 2 lemons (sliced)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • Fresh herbs (such as dill or parsley) for garnish
  • Assorted vegetables (broccoli, asparagus, or bell peppers) – optional

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a sheet pan and drizzle with olive oil, then sprinkle with minced garlic, salt, and pepper.
  3. Arrange lemon slices on top of the salmon.
  4. Add assorted vegetables around the salmon if using, drizzling them with olive oil, salt, and pepper.
  5. Bake for 12-15 minutes or until the salmon flakes easily with a fork.
  6. Garnish with fresh herbs before serving.

Notes

Serve with fluffy quinoa, a light salad, or garlic mashed potatoes. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
