A healthy twist on classic shrimp scampi using zucchini noodles, infused with garlic and lemon for a light yet delicious meal.

Ingredients

  • 2 Zucchini
  • 1 lb Shrimp
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1/4 cup Parsley, chopped
  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes (optional), to taste

Instructions

  1. Spiralize the Zucchini using a spiralizer until you have beautiful noodle shapes.
  2. Heat olive oil over medium heat in a skillet and toss in the minced garlic; sauté until fragrant.
  3. Add the shrimp to the skillet, cooking them until they turn pink and opaque.
  4. Fold the zucchini noodles and lemon juice into the pan, cooking for a couple of minutes until slightly tender.
  5. Season with salt, pepper, and optional red pepper flakes according to taste.
  6. Garnish with freshly chopped parsley and serve immediately.
