  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha (or to taste)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a large pan over medium-high heat.
  2. Add the sliced chicken and season with salt and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
  3. Add the garlic and ginger, cooking for an additional minute until fragrant.
  4. Stir in the mixed vegetables and stir-fry for another 5 minutes.
  5. Pour in soy sauce and sriracha, stirring to combine. Cook for an additional 1-2 minutes.
  6. Serve hot over cooked rice or noodles.
