  • 2 cups strawberries, hulled and sliced
  • 1/4 cup sugar (for strawberries)
  • 2 cups all-purpose flour
  • 1/2 cup sugar (for biscuits)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Macerate the strawberries by combining them with 1/4 cup sugar. Let sit to enhance sweetness.
  2. Preheat your oven to 425°F (220°C).
  3. Whisk together flour, 1/2 cup sugar, baking powder, and salt in a bowl.
  4. Cut in cold butter until the mixture resembles coarse crumbs.
  5. Stir in heavy cream and vanilla extract until just combined.
  6. Knead the dough gently on a floured surface.
  7. Roll out dough to 1-inch thick and cut into rounds.
  8. Bake for 12-15 minutes or until golden brown.
  9. Assemble by slicing the shortcakes and layering with macerated strawberries and whipped cream.

Notes

Make sure your butter is very cold for flaky biscuits. Assemble shortcakes just before serving to avoid sogginess.
