  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender.
  3. Heat olive oil in a skillet over medium heat and sauté the onion and garlic until softened.
  4. Add ground turkey, paprika, and cumin. Cook until browned and cooked through.
  5. Serve the ground turkey over the roasted sweet potatoes and garnish with fresh cilantro.
