A light and healthy summer meal featuring zucchini filled with a savory mixture of ground turkey, rice, and cheese.

Ingredients

  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 cup cooked rice (or quinoa)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Heat a drizzle of olive oil in a skillet over medium heat and add the ground turkey. Cook until browned, about 5-7 minutes.
  4. Add the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper to the skillet. Mix well and cook for another 5 minutes.
  5. Fill each zucchini boat generously with the turkey mixture.
  6. Top each boat with shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes until zucchinis are tender and cheese is bubbly.
  8. Garnish with fresh basil if desired, and serve warm.

Notes

Use a melon baller to scoop out the zucchini easily. You can also experiment with different grains and proteins.
