A quick and flavorful dish perfect for busy weeknights, featuring sausage and assorted veggies baked all in one pan.

Ingredients

  • 1 pound of sausage (Italian, chicken, or your choice)
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups of baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the sausage, bell pepper, onion, and baby potatoes on a large sheet pan.
  3. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.
  4. Toss everything together until well combined.
  5. Spread the mixture in a single layer on the sheet pan.
  6. Bake for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender.

Notes
